Delicata Squash with an Egg in the Hole

Last week we picked up a Delicata squash at Trader Joe’s … I had never seen one before and was feeling intrigued as they are smaller than butternut (which we had a couple weeks ago) but still felt fall-like and festive. I decided to half it and roast it in the oven and then drop an egg in the middle. I ate mine with a green side salad and it was delicious! And so simple and just the right size. Plus you can eat the skin, which is delicious.

The Recipe:

I halved it and rubbed it with olive oil, salt, and pepper. Then, I chopped some onion and and garlic and threw it in the middle. I put the squash in the oven at 425 degrees for about 30 minutes (or until I could poke my for easily into the the meat). Then! I pulled it out and dropped an egg into the middle and put it back in for about 10-15 minutes. In fairness, I think I left it too long so I would keep an eye on it while baking. Then, I served it with a little cilantro on top as a garnish.

  • Delicata squash
  • Olive oil
  • Salt and pepper
  • 2 eggs (1 for each half)
  • Cilantro

While cooking, I watched: Murdoch Mysteries–a fave Canadian crime show set in the 19th century about the intersections of science, technology, and crime. So good.
