Guacamole is so delicious and it is hard to go wrong, but just in case you were curious here is what I do.
Roast garlic: Cut the tips off and peel off the extra outside part. Pour olive oil with a little salt into something that is oven safe. Put the garlic in upside down (that is cut ends in the olive oil) and roast for about 15 or 20 minutes on 425.
Half a red onion: Chopped up and sauteed in olive oil with smoked salt.
A whole lime.
Many avocados (I think I did like 6).
Half a tomato chopped up.
Mash it all up. Add salt and pepper to taste (I love smoked salt and so use that. It is delicious! Makes things taste like bacon. True story.)
